    Fantastic knife! Very sharp. I use it to fillet salmon, and to remove the silver skin from beef tenderloin. All with ease with this knife. The leather sheath is very useful to protect the knife edge and point, and you from this very sharp blade.

    Wusthof Classic 7-Inch Fillet Knife has worked very well for filleting Chinook (King) salmon and Dolly Varden — takes and holds a nice edge, balances well; perfect blade shape for filleting large or small fish. If you aren’t in the habit of keeping a sharpening steel handy, the included little sharpening tool works well, too. Insert knife into sheath carefully as the blade is thin and flexible and can slip between leather and liner. As ever, I suggest a mesh protective glove if you are doing lots of fish or are particularly tired or a bit of a klutz like me.

    Morakniv Fishing Comfort Fillet Knife is made in Sweden and is a very good knife. I have three of them and they hold a very sharp edge.

    Wusthof Gourmet knife is pretty good. The blade has held a nice edge so far. The textured runner handle is also nice and I like the sheath. It allows it to dry and holds it well. Been through about 100 gills. At first it was so sharp I’d cut through the fish. It’s a tad stiffer then the old rapala I used. So it took a learning a curve to get used to. Now I’m getting used to it. Time will tell how it holds up though. I would buy it again.
